Although it’s the middle of summer, this stew is perfect any time of the year. Serve with crusty bread and you’ve got a simple weeknight dinner set to go.

Market List:

  • 2 large carrots
  • 2 medium onions
  • 2 medium tomatoes
  • 1 bunch of cilantro
  • 1 bunch of dill
  • 1 lemon
  • 1/2 cup of Turkish apricots
  • 1 1/2 cups red lentils
  • 1 cup basmati rice
  • Sunflower oil
  • 1 tbsp Cumin, 1 tsp garlic powder and 1 bay leaf
  • Salt & Pepper to tast
